He later served as a head chef for thirteen years under Christian IV, the Count Palatine of Zweibrücken. Between 1784 and 1795, he worked as a confectioner and chef in Paris. His life coincided with the French Revolution, a period of great political change. He was arrested in April 1794 during the Reign of Terror but managed to avoid execution. In 1795, he began his formal experiments to find ways to preserve soups, vegetables, and juices.

Despite his scientific success, Appert struggled with significant financial challenges. His equipment was very expensive, and he was not a highly skilled businessman. He declared bankruptcy in 1806, though he was able to continue his work. In 1795, the French army had offered a 12,000-franc prize for a new food preservation method. In 1810, the Bureau of Arts and Manufactures gave him an ex gratia payment of 12,000 francs. This payment came with a specific condition: he had to make his process public. Appert accepted the money and published his findings in a book.

His published treatise was titled *L'Art de conserver les substances animales et végétales*, or *The Art of Preserving Animal and Vegetable Substances*. This was the first book ever written about modern food preservation methods. In 1810 alone, 6,000 copies of this book were printed. Interestingly, Appert never fully understood the biological reason why his method worked. The science of bacteriology had not yet been developed during his lifetime. He did not know that heat killed the bacteria that cause food to spoil. However, his method was so effective and simple that it spread quickly across the world.

Appert's inventions had a massive impact on global logistics and military services. His preserved goods were highly valued by naval services. These products were much better than the dried or salted food sailors previously had to eat. His goods were even exported to places as far as Bavaria and Saint Petersburg. Even though he received silver and gold medals from the *Société d'encouragement pour l'industrie nationale*, he remained in financial difficulty. His factory at Massy was even destroyed by Prussian and Austrian forces in 1814. Ultimately, he died in poverty in 1841, but his legacy lives on through the science of canning.
