Long ago, a man named Nicolas Appert used jars. He put fish in jars of boiling water. Later, a man named Peter Durand used tin cans. This made it easy to move food.

Many kinds of fish go in cans. You might find tuna or salmon. Some fish are packed in oil or water. People use them for sandwiches or salads. It is a handy snack to have!

Canned fish is food sealed in airtight containers.

This method keeps fish safe to eat for one to five years. To make it, fish are put in cans and heated. This heat kills tiny microbes. These microbes can make food spoil or smell bad. High heat in a pressurized cooker is often needed.

Many types of fish are canned. Sardines are often packed in oil, water, or sauce. They are packed so tightly that people use the phrase "packed like sardines" for crowds. Tuna is also very common. It is often packed in oil or brine. People use tuna for sandwiches, salads, or casseroles. In North America, salmon canning became a big business. The first large salmon cannery was built in 1864. It was even built on a barge in a river!

Canned fish is a special way to keep seafood safe to eat for a long time. This method seals fish in airtight containers like tin cans. Because they are sealed so well, they can stay good for one to five years.

This process is very important for food safety. Fish can have low acidity levels, which means tiny microbes can grow easily. To stop this, the fish must be sterilized with very high heat. This heat must be higher than the boiling point of water. To reach these high temperatures, workers use a machine called a pressurized cooker. This heat kills microbes like Clostridium botulinum that could cause sickness.

Making canned fish involves many careful steps to keep it delicious. For example, workers often wash sardines and remove their heads. Some larger fish are even cleaned out completely before they are packed.

The fish might be deep-fried or steam-cooked before they are dried. Once they are ready, they are packed into cans with oil, water, or sauces like tomato or mustard. For tuna, the fish are often gutted by hand first. They are precooked for anywhere from 45 minutes to three hours. After they are cleaned and filleted, the cans go through "retort cooking." This means the sealed cans are heated for two to four hours to kill any remaining bacteria.

People have been finding ways to preserve fish for a long time. A Frenchman named Nicolas Appert is often called the "father of canning." In 1795, he began experimenting by putting fish in jars of boiling water. At that time, the French government offered a prize of 12,000 francs to anyone who could find a cheap way to preserve food for armies. Appert won that prize in January 1810. He did not know why his method worked because microbes were not understood yet. It took another 50 years for Louis Pasteur to show how microbes cause food to spoil.

While jars worked, they were hard to move around without breaking. A British inventor named Peter Durand solved this by using tin cans instead. This created the modern way we can food today. In the 1830s, Scotland used canning to keep fish fresh for markets. By the 1840s, people in Maine and New Brunswick were canning salmon.

A very large salmon cannery was built in 1864 on a barge in the Sacramento River. By 1883, the Columbia River was a huge center for this work. There were 39 canneries there that processed 15,000 tonnes of salmon every year. Most of that fish was the Chinook kind.

Canned fish is a part of our daily lives in many ways. In the United States, people use canned tuna for many different meals. About 52% of canned tuna is used to make sandwiches. Another 22% goes into salads, and 15% is used for casseroles.

Even the way we talk is linked to canned fish! Because sardines are packed so tightly in their small cans, people say "packed like sardines" when they are in a crowded place. There is even a children's game called "Sardines." In the game, players hide and pack into the same small space one by one. It is a fun way to remember how these little cans work.

Canned fish refers to seafood that has been processed and sealed in airtight containers. These containers are often metal tin cans. This method is a way of preserving food to make it last longer. Most canned fish can stay on a shelf for one to five years.

This process is vital because fish have low acidity levels. In science, acidity is measured by pH levels. Fish have a pH higher than 4.6, which is considered low acidity. At these levels, microbes can grow very quickly and cause spoilage.

To keep the fish safe, the containers must undergo sterilization. This means using very high heat to kill microorganisms. Because the heat must be higher than the boiling point of water, workers use pressurized cooking. This pressure allows the temperature to rise above what a normal pot could do. This step is necessary to eliminate dangerous microbes like Clostridium botulinum. This specific bacterium can cause a serious illness called botulism. Once the can is sealed after sterilization, no new microorganisms can enter to grow inside.

Different types of fish require different preparation steps. For sardines, or pilchards, the process often begins with washing the fish. Workers remove the heads and sometimes the guts, which is called eviscerating. Some sardines are deep-fried or steam-cooked before they are dried. They are then packed tightly into small cans with olive oil, sunflower oil, or soybean oil. Other varieties use water or sauces made of tomato, chili, or mustard. Because they are packed so closely, people use the phrase "packed like sardines" to describe crowded places.

Tuna processing follows a specific sequence of events. First, the tuna is usually gutted by hand. It is then precooked for a duration of 45 minutes to three hours. After precooking, the fish is cleaned and filleted. The dark lateral blood meat is often set aside to be canned separately for pet food. The fish is then placed in cans with water, brine, or vegetable oils. The final step is called retort cooking. The sealed cans are heated for two to four hours to ensure all bacteria are destroyed.

History shows how much technology changed food storage. In 1795, a Frenchman named Nicolas Appert began experimenting with fish in glass jars. He placed these jars in boiling water to preserve the contents. During the Napoleonic Wars, the French government offered a 12,000 franc prize for a way to feed large armies. Appert won this prize in January 1810. However, glass jars were difficult to transport without breaking. Shortly after, a British inventor named Peter Durand patented the use of tin cans. This invention created the modern canning process we use today.

The salmon canning industry grew rapidly in North America. In the 1830s, Scotland used canning to keep fish fresh for markets. By the 1840s, salmon canning began in Maine and New Brunswick. The first industrial-scale salmon cannery was built in 1864 on a barge in the Sacramento River.

By 1883, the Columbia River had become a major center for this industry. At that time, 39 canneries were operating. These factories used 1,700 gillnet boats to supply 15,000 tonnes of salmon, mostly Chinook, every year.

Canned fish remains a significant part of the modern food system. In the United States, canned tuna is used in many common meals. About 52% of canned tuna is used for sandwiches. Another 22% is used for salads, and 15% goes into casseroles or meal mixes.

Scientists also monitor the quality of these products. For example, they check for histamine, which can cause rancid flavors. The international standard limits histamine to 200 milligrams per kilogram. This ensures that the food is both safe and tasty for everyone.
