First, a machine cuts a rectangle from a sheet of metal. This rectangle is curled into a tube and welded shut. Then, a circle is cut for the lid. The lid is shaped like a very flat top hat. A little bit of rubber is put inside the edge. Finally, a machine called a seamer joins the lid to the body. This creates a tight seal called a double seam.

In 1809, a French man named Nicolas Appert found a way to use glass jars. The French government offered 12,000 francs to anyone who could help feed their large army. Appert won the prize in 1810. Later, a man named Philippe de Girard helped start the use of tin cans. In 1811, a man named Peter Durand sold his patent for cans. This helped the process move to other countries like the United Kingdom.

In the 1800s, canned food was very expensive. It was mostly used by the British Army and Navy. Explorers like Sir William Edward Parry used canned beef in 1824. During big wars, demand for canned food grew very fast. In World War I, soldiers ate things like canned sausages and stew. By 1916, armies wanted better meals to keep soldiers happy. In 1974, researchers tested food from the wreck of the Bertrand. This steamboat sank in the Missouri River in 1865. Even though the food was 109 years old, it showed no microbial growth. It was determined to be safe to eat, though its appearance and vitamins had changed.

To ensure safety, producers must control microbes. Microbes are tiny organisms that cause food to spoil. One dangerous organism is Clostridium botulinum, which causes botulism. Its spores can only be destroyed at temperatures higher than the boiling point of water. Therefore, low-acid foods like meat, poultry, and vegetables require a pressure canner. These machines reach temperatures between 116 and 130 degrees Celsius.

High-acid foods, such as fruits or pickled vegetables, can be processed in a boiling water bath. In these cases, the acidity itself stops the spores from growing.

Modern canning relies on the double seam to create a sanitary can. This process was developed in Europe around 1900. A double seam provides an airtight seal that prevents contamination. This method replaced the older, more dangerous use of lead solder. To make a can, a machine cuts a rectangle from coated tin plate. This rectangle is curled around a die and welded into a cylinder. Rollers then flare the edges to create a flange.

Simultaneously, a circular lid is stamped into a shape resembling a flat top hat. A rubber compound is placed inside the lid's curl. Finally, a seamer uses a base plate and a chuck to press the lid and body together into a tight, continuous fold.

History shows that the need for canning often came from military necessity. In 1809, Nicolas Appert, a French confectioner, discovered that food cooked in jars did not spoil if the seals stayed intact. The French government offered a prize of 12,000 francs for a method to preserve rations for the Grande Armée. Appert won this prize in 1810.

By the 1860s, mechanization changed everything. Smaller steel cans could be made by machines. This reduced the cooking time from six hours to just thirty minutes, making food much more affordable.

As cities grew, the demand for canned food increased across Europe and America. In the late 19th century, companies like Nestlé and Heinz provided food to urban workers. During World War I, the demand for canned goods skyrocketed. Soldiers in the trenches needed high-calorie food that would not spoil during transport.

Initially, soldiers ate simple items like pork and beans or canned sausages. By 1916, many complained about the low quality. This led armies to provide complete meals-in-a-can. The French Army even issued gourmet items like coq au vin and beef bourguignon to improve morale.

Canning connects food science to global history and logistics. It allowed large armies to campaign outside of summer and autumn months. It also supported the growth of massive urban populations in Victorian Britain. Today, the industry uses many different technologies. These include vacuum treatment, ionizing radiation, and aseptic retort pouches. While glass jars remain popular for high-value items, tin-coated steel remains the standard for most of the world's preserved food.
