The plant functions through a specific biological process to store energy. It features a rosette of broad, green leaves growing from a flat crown. Through photosynthesis, these leaves convert sunlight into sugar. The plant then transports this sugar down into its conical, white, fleshy taproot. This root serves as a storage organ for the plant's energy. The composition of the root is roughly 75% water, 20% sugar, and 5% pulp. Depending on the specific cultivar and local growing conditions, the actual sugar content can range from 12% to 21%.
