The production process begins with a biological cycle in the trees. During cold winters, maple trees store starch in their trunks and roots. In late winter and early spring, this starch converts into sugar. This sugar rises into the sap as the weather begins to change.

Producers harvest this sap in an area known as a sugarbush. Most trees are tapped once they reach 30 to 40 years of age. An average tree can produce up to 40 liters of sap per season. This amount represents roughly seven percent of the tree's total sap. The tapping season is short, usually lasting only four to eight weeks.

To collect the sap, workers must tap the tree trunks. They bore holes into the wood to allow the liquid to flow. A small tube or spout, called a spile, is inserted into the hole.

However, climate change is creating new challenges for farmers. Rising temperatures can shift the harvest season earlier in the year. Changes in rainfall and drought also impact the forest ecosystems. Scientists are currently researching ways to use saplings to boost productivity. This research might eventually allow syrup to be made in warmer climates.
