The history of beet classification is quite complex. In 1753, the scientist Carl Linnaeus first described the species in his work *Species Plantarum*. At that time, he viewed the sea beet and chard as mere varieties. By 1762, he updated his classification to list the sea beet as a separate species. Today, scientists recognize them as the same species because they can hybridize. This means they can mate to produce fertile offspring. The Altissima group contains the sugar beet, a major commercial crop. It was developed in Germany during the late 18th century to produce sucrose. The Cicla group includes chard or spinach beet, which has been used for food since the second millennium BC. The Flavescens group is Swiss chard, which is known for its thick, fleshy midribs. The Conditiva group is the traditional red garden beet, often used in soups like borscht. Finally, the Crassa group is the mangelwurzel, a large root grown as fodder for animals.

Unlike red cabbage, which uses anthocyanin, beets use pigments called betalains. These pigments are stored in tiny compartments within the cells called vacuoles. Because these cells are unstable, they can "leak" when the plant is cut or heated. This is why beets leave a strong purple stain on surfaces. Some people may also experience beeturia, where their urine turns red due to these pigments.

They are very dependent on a nutrient called boron. On commercial farms, a harvest of 60 tonnes per hectare might require 600 grams of elemental boron per hectare. Without enough boron, the plant's growth can fail, leading to a condition called heart rot. This need for boron likely comes from their ancestors, which lived in salty sea spray. Furthermore, the "earthy" taste many people notice in beets might come from a substance called geosmin. Scientists are still studying if the plant makes this itself or if soil microbes produce it.
