It starts in your mouth. When you see or smell food, your body gets ready. Your teeth chew the food. Your salivary glands make saliva, which is spit. Saliva has enzymes. Enzymes are tiny tools that break down food. One enzyme, called amylase, breaks down starch. Another enzyme, called lipase, breaks down fats. Your tongue moves the food into a soft ball. This ball is called a bolus. You swallow it down a tube called the esophagus.

In your stomach, the food mixes with gastric juice. This juice helps break it down more. The food then moves into the small intestine. This is the longest part of the system. Most of the work happens here. The food is broken down into a liquid called chyle. Your body then absorbs this chyle. Finally, the large intestine takes in water. The rest of the waste leaves your body.

This is called the digestive system. It is made of a long tube called the gastrointestinal tract. This tube starts at your mouth and ends at your anus. The tract is very large and covers a long distance. Many other parts help out too. These are called accessory organs. They include your tongue, salivary glands, pancreas, liver, and gallbladder.

Digestion is the way your body breaks food into tiny pieces. Once food is small enough, your body can absorb it. This gives your body the energy it needs to work.

Digestion happens in three main stages. First is the cephalic phase. This starts even before you take a bite. When you see or smell food, your body reacts. Your gastric glands start to make secretions. Next, the food enters your mouth for mechanical breakdown. This means your teeth and muscles chew the food. Your tongue helps move the food around.

Saliva also starts a chemical breakdown. It contains enzymes like amylase and lingual lipase. These tools begin to break down starch and fats. Chewing mixes food with saliva to make a soft ball called a bolus. You then swallow the bolus down the esophagus.

The second stage is the gastric phase. This takes place inside your stomach. Your stomach has millions of tiny gastric glands in its lining. These glands make gastric juice. This juice contains gastric acid to help break food down further. The food mixes with this juice until it becomes a liquid called chyme.

The food then moves into the duodenum. The duodenum is the very first part of the small intestine. To move the food along, your body uses peristalsis. Peristalsis is a way of using rhythmic muscle contractions. These contractions push food through the esophagus and the rest of the tract.

The third stage is the intestinal phase. Most of the digestion happens in the small intestine. This is the longest part of the gastrointestinal tract.

Here, the food mixes with enzymes from the pancreas. The partially digested food eventually becomes a liquid called chyle. This chyle is absorbed into your lymphatic system. After the small intestine, the food enters the large intestine. The colon is the main part of the large intestine. It is the largest part of the whole tract. The large intestine absorbs water and some minerals back into your blood.

In a factory, machines break things down to make something new. Your body does something similar with your meals. It uses different tools at every stop along the path. Your teeth act like grinders to crush the food. Your enzymes act like tiny scissors to cut the food apart. Even your sense of taste is part of this system. Taste buds on your tongue help you sense salt, sour, bitter, sweet, and umami. This helps your body decide if food is safe to eat. Finally, any waste left over is stored in the rectum. It then leaves your body through the anus.

Salivary glands play a vital role in preparing food for the next steps. There are three main pairs of these exocrine glands. The largest are the parotid glands, which primarily secrete a serous fluid. The submandibular glands sit under the jaw and produce both serous fluid and mucus.

The sublingual glands are located under the tongue and produce mainly mucus. In addition to these, there are between 800 and 1,000 minor salivary glands throughout the mouth. These glands produce saliva that accounts for lubrication and dental health. Saliva also contains haptocorrin, a protein that binds to vitamin B12 to protect it from stomach acid.

The second stage is the gastric phase, which occurs within the stomach. The stomach contains millions of embedded gastric glands within its mucosa. These glands secrete gastric juice, which includes gastric acid, to further break down food. As the food mixes with this juice, it turns into a substance called chyme.

To move this material forward, the body uses peristalsis. Peristalsis is a series of rhythmic muscle contractions. These contractions move food through the esophagus, the stomach, and the rest of the GI tract. The pyloric sphincter helps regulate the passage of food into the next section.

The third stage is the intestinal phase, where most digestion takes place. This happens in the small intestine, which is the longest part of the GI tract.

The food, now in the duodenum, mixes with digestive enzymes from the pancreas. Once the food is fully broken down in the small intestine, it is absorbed as chyle. This chyle enters the lymphatic system to be used by the body. The small intestine has a smaller diameter than the large intestine, but it is much longer.

The final part of the process occurs in the large intestine. The colon is the main part of this large structure.

The large intestine serves to reabsorb water and certain minerals back into the blood. This leaves behind waste products, known as feces. These waste products are stored in the rectum until they are excreted through the anus. This stage is so closely linked to nutrient management that the large intestine is sometimes considered part of the excretory system.

Sensory perception is also a key part of how the system functions. Taste is a form of chemoreception that happens in specialized taste buds. These buds are located mainly on the upper surface of the tongue.

They allow the brain to distinguish between five basic tastes: saltiness, sourness, bitterness, sweetness, and umami. This ability is a vital defense mechanism. For example, detecting bitterness can warn a person about potentially poisonous plant compounds. By sensing these chemical qualities, the body helps decide which foods are safe to consume.
