Many global health authorities, such as the World Health Organization and the American Heart Association, recommend limiting its consumption. This advice is due to the oil's high saturated fat content. Lauric acid can increase levels of both high-density lipoprotein (HDL) and low-density lipoprotein (LDL) cholesterol. While it may improve the total cholesterol profile, the increase in LDL is a risk factor for cardiovascular diseases. Some producers use hydrogenation to change the oil's properties.
