This intermediate is then converted into vanillin through oxidative decarboxylation.
Another 15% of global production comes from lignin, which is a component of wood. Lignin is a byproduct of the sulfite pulping process used to make paper. The company Borregaard in Norway is the only remaining producer using this wood-based method. Lignin-derived vanillin is sometimes considered to have a richer flavor profile. This is because it contains a minor component called acetovanillone, which is not present in guaiacol-based vanillin. However, using lignin has become less popular in some regions due to the large amount of caustic liquid waste produced during the process.
Since the year 2000, a third method called biosynthesis has emerged. This involves using microorganisms to act on ferulic acid, which is extracted from rice bran. 
Vanillin is also found in many unexpected places in our environment. It exists in small amounts in foods like olive oil, butter, raspberries, and lychees.
