Later, he turned his attention to the digestive system. He wanted to find the specific substances that break down food in the body. 
In 1836, Schwann made a major discovery regarding digestion. He isolated a substance from the stomach lining that could break down egg-white proteins. He named this substance pepsin, a term derived from the Greek word "peptein," meaning to digest. This was the first time an enzyme was isolated from animal tissue. Schwann showed that pepsin could turn albumin into smaller parts called peptones. This discovery helped explain how organized bodies process nutrients through specific chemical agents.
Schwann also performed groundbreaking work on yeast and fermentation. Using powerful microscopes, he observed that yeast cells were tiny, living organisms. He wanted to know if fermentation was a chemical process or a biological one. To test this, he used a closed vessel to control the temperature and oxygen in fermenting beer. He found that heating the liquid stopped fermentation. This suggested that a living microorganism, rather than just oxygen, was necessary for the process. 
To further his study, Schwann tested the effects of purified versus unpurified air. He sterilized air by passing it through heated glass bulbs. He observed that fermentation did not occur in the presence of this purified air. However, fermentation did happen in unpurified air. This provided strong evidence against the theory of spontaneous generation. Spontaneous generation was the idea that life could arise from nonliving matter. Schwann proved that living yeast must be present to start the process of turning sugar into alcohol.
Schwann's education began in Germany, where he was born in Neuss in 1810. He studied at the University of Bonn and later at the University of Berlin. In Berlin, he worked as an assistant to the famous physiologist Johannes Peter Müller. Schwann earned his M.D. degree in 1834 after completing a thesis on how oxygen affects chicken embryos. Although he could have practiced medicine, he chose to focus on research. He used a family inheritance to support his work, as his assistant salary was only 120 taler. 
As his career progressed, Schwann moved to Belgium to teach. He held the chair of anatomy at the Université Catholique de Louvain in 1839. Later, in 1848, he transferred to the University of Liège. While teaching, he became an inventor, designing a portable respirator to support human life in environments where air cannot be breathed. He was highly respected by the global scientific community. In 1878, colleagues honored him with a book containing 263 autographed portraits from scientists worldwide. Schwann died in Cologne on January 11, 1882.
