Vegetables and beans are used a lot. People eat many beans, like fava beans. 

Middle Eastern food is a wonderful mix of many different tastes and traditions. 
Cooking often involves many steps to create deep flavors. For example, making burghul involves partially cooking wheat in water. Then, the grains are dried in an oven or the sun. After that, they are broken into small pieces. For desserts, cooks often use scented waters like rose or orange flower water. They add these to a sweet syrup called qatir. This syrup is made by boiling sugar, scented water, and lemon juice together. 
This food has a very long and interesting history. The region includes the Fertile Crescent, where wheat was first grown. Long ago, people in Mesopotamia and Egypt discovered fermentation. This helped them leaven bread and make beer. The region has always been a crossroad for many lands. Merchants brought figs, dates, and nuts to new places. Spices like cloves and peppercorns also traveled through these lands. Even the Ottoman Empire helped introduce sweet pastries made of thin dough.
Many specific dishes show the skill of Middle Eastern cooks. Kebabs are very popular grilled meats often sold at restaurants. Shish kebab uses cubed lamb on skewers. Kofta kebab uses ground meat mixed with onions and spices. 

Food also brings people together through special customs and drinks.
