Cereals are specific types of grasses from the Poaceae family. They are cultivated globally for their edible grains, which are botanically known as caryopses. In a caryopsis, the seed coat is fused directly to the pericarp, or the fruit wall.

Because they are the world's largest crops, cereals serve as staple foods for most human populations. While most cereals are grasses, some plants like quinoa, amaranth, and buckwheat are called pseudocereals. These are not true grasses but are used in much the same way.

The biological structure of a cereal plant is quite specialized. These grasses feature stems that are hollow except at the nodes. Their leaves are narrow and grow in two ranks, with the lower part forming a leaf-sheath that encloses the stem. This leaf structure protects the growing meristem, which is the plant's growth tissue, from grazing animals. Most cereal flowers are hermaphroditic and anemophilous, meaning they are primarily pollinated by the wind. However, insects can occasionally play a role in the pollination process.

Cultivation methods vary depending on the climate and the specific cereal variety. Most cereals are annuals, meaning they complete their life cycle and die after one harvest. An exception is rice, which can sometimes survive as a perennial to produce a ratoon crop.

Cereals are categorized into cool-season and warm-season varieties. Cool-season cereals, such as rye, barley, and wheat, prefer temperate climates. They can be planted as winter varieties in autumn or spring varieties in the spring. Warm-season cereals, like millet and sorghum, require tropical heat and cannot tolerate frost.

Processing cereals involves several technical steps to make them edible or shelf-stable. After harvesting, often by a combine harvester, the grain must be dried to prevent mold from fungi like Aspergillus.

Once dry, the grain is moved to silos or grain elevators for storage. Manufacturing facilities then remove the outer layers of the grain through milling. This produces products like flour, oatmeal, or pearl barley.

Some grains undergo malting, where enzymes are activated to turn starches into sugars. These sugars are then used to create products ranging from beer and whisky to high-fructose corn syrup.

While essential, large-scale cereal farming has significant environmental consequences. High-intensity monocultures can lead to soil erosion and the depletion of water through heavy irrigation.

The use of nitrogen fertilizers can also contribute to global warming and water pollution. To mitigate these effects, farmers are exploring sustainable practices. These include no-till farming, which reduces soil disturbance, and intercropping, where cereals are grown alongside legumes to naturally fix nitrogen in the soil.
