Learning to dance was a big job for Grisi. She trained at the ballet school of Teatro alla Scala in Milan. Later, she studied with a famous dancer named Jules Perrot. She worked with him in many big cities across Europe. These places included London, Paris, Vienna, Munich, and Milan. In these cities, she both sang and danced. Her dancing was what people loved most. She performed choreography that caught the attention of many critics. This hard work helped her become a star.
Her most famous moment happened in Paris in 1841. 
Later in her life, Grisi traveled to Russia. In 1850, she joined Jules Perrot in St. Petersburg. She danced at the Imperial Bolshoi Kamenny Theatre. At first, the Russian audience was not very excited. They were used to a different dancer named Fanny Elssler. However, the people in Russia soon learned to love her. Grisi became a prima ballerina there. This is a lead dancer in a company. She worked with Joseph Mazilier to perform special dances. These included roles in La Jolie Fille de Gand and Vert-Vert.
Eventually, Grisi decided to stop dancing. She moved to a place called Saint-Jean in Geneva.

She also earned additional fees for her performances. Dance historian Lillian Moore noted that Grisi possessed a unique combination of skills. She had the buoyant elevation of Taglioni and the technical virtuosity of Elssler. She also had the mimic powers of Elssler and the exuberant facility of Cerrito. Because she could do so many things well, she was considered more versatile than her peers.

Throughout her career, Grisi created many important roles. Besides Giselle, she created the dual role of Peri and Leila in the oriental ballet La Péri in 1843. In 1844, she created the title role in Paquita. She also performed in Pas de Quatre in 1845 as the second ballerina. Another notable role was Mazourka in Le Diable à quatre, which she created in 1845. These roles demonstrate the wide range of her artistic capabilities. Her work helped define the classical repertoire of the 19th century.
