The pericarp is divided into three distinct layers. The outer layer is called the exocarp. The middle layer is the mesocarp, which is often the juicy part. The innermost layer is the endocarp. In a berry, this endocarp is soft. This is how you tell a berry apart from a drupe. A drupe, like a peach, has a hard stony pit. That pit is a very tough endocarp. Some scientists say a berry's endocarp must be less than 2 mm thick. This thickness helps define what a berry really is.

The Latin word "bacca" was once used for any small round fruit. In the 1500s, a man named Andrea Caesalpinus studied how flowers and fruits work. Later, in 1751, Carl Linnaeus wrote a famous science textbook. He used eight different terms to describe various fruits. He helped distinguish the berry from the drupe and the pome. In the late 1700s, Joseph Gaertner added even more names. He created the term "pepo" for gourd fruits. This helped scientists group fruits like cucumbers more accurately.

In a strawberry, the fleshy part grows from the receptacle rather than the ovary. Raspberries and blackberries are aggregate fruits. They consist of many small fruitlets from different ovaries joined together. Pomes, like apples and pears, are also not berries. They have a central core that separates the seeds from the outer flesh. Even the mulberry is different; it is a multiple fruit that grows from a cluster of many flowers.

From an evolutionary perspective, fleshy fruits like berries are a major success for plants. Fossils indicate that early flowering plants primarily had dry fruits. Fleshy fruits only appeared later, near the end of the Cretaceous Period or the start of the Paleogene Period. This change likely happened because of animals and birds. These vertebrates eat the juicy, colorful fruit and then move the seeds to new locations. This process of seed dispersal helps plants spread across different environments. By evolving a tasty pericarp, plants turned animals into partners for their survival.
